The Sun Inn Lydiard appoints new head chef

The Sun Inn in Lydiard Millicent has appointed Francisco Rodriguez as new head chef.

Originating from Spain, Rodriguez moved to the UK ten years ago and has recently been nominated for the European tourism sustainability award “GrINN Awards 2022” in the category of Best Gastronomy.

He began his career in hospitality in the Spanish town of Granada, famous for being one of the best places for tapas in Spain, and brings over 12 years’ experience to the role, where he will be responsible for running the pub’s kitchen.

Rodriguez stands out for being one of the pioneers in the fusion of British and Spanish gastronomies and for promoting the use of local and seasonal products.

Commenting on his appointment, Chef Rodriguez said:  “I’m very excited to take on the role of Head Chef at The Sun Inn and be able to bring new innovative dishes to the menu“.

Authentic Spanish tapas such as King Prawns “pill-pill” -cooked in olive oil with garlic and chilli-, Meatballs in Mediterranean sauce or Squid “a la Romana” -fried squid with aioli sauce- can be found on the new menu, as well as a selection of pub classics.
